Hi and welcome!

My name is Monica and I'm so happy you're here. Before I get into the nitty-gritty of why I created this website, I thought I'd share a little bit about my life sans the health drama.

I'm a Minnesota native who transplanted to Colorado in 2004. To be fair, I was a pretty pathetic Minnesotan because I hate the cold. Literally...I was complaining about the weather before I could talk. Colorado suits me perfectly because the four seasons still exist but in a much milder way. I can actually stand the winter months! It's no secret that the (almost) daily sunshine helps that tremendously too.

I live with my loving husband, many houseplants, and three fur babies: a cat and two dogs. When I'm not cooking, I enjoy spending time with them, practicing yoga, reading, listening to podcasts, traveling, meditating, seeing live music and going on walks or hikes. 

My Autoimmune Story

My personal health journey began in early 2016 when I was diagnosed with Crohn’s Disease. I had been experiencing symptoms that were quickly and progressively getting worse. The discovery was shocking; I had always been healthy and autoimmune disease does not run in my genetic line. I’m one of the countless mystery autoimmune cases that, to my dismay and frustration, stumps medical professionals.

A phrase that has really stuck with me through my personal health saga is: Healing is not linear. I have experienced severe symptoms, followed by feeling good, back to not quite right, within days of each other. While it can certainly be defeating, this disease continually reminds me that I have to be patient. There are no quick fixes to the healing process. That being said, there are things I've found that help. One of those is how I feed myself.

A silver lining of this traumatizing ordeal is that I’ve become passionate in, and truly enjoy, creating recipes that are compliant with whatever diet I’m on. Ever since my diagnosis, I’ve been on the path of questioning: “Why me?” “What happened?” and “How do I heal from and manage this chronic illness?” I’ve gone down many rabbit holes, done tons of trial and error, and found that honing my diet can help manage my symptoms. Currently, I’m on the Autoimmune Protocol diet, aka the Autoimmune Paleo diet, or AIP for short. I will also be posting recipes for the Paleo, Whole30, and Plant-Based diets as I continue through the AIP reintroduction phase.

It's worth noting that I'm not a trained medical professional. I have never cured myself of my disease and do not claim you will be able to either. What can I say...I'm a realist and I believe in the research. While I have successfully gone into a long remission through various tactics, including altering my diet, I, unfortunately, flared again. Nevertheless, I do believe that what you eat can help reverse your symptoms. Keep in mind that my food triggers may be different from yours. Our bodies are unique. That being said, I sincerely hope that the recipes on this website will empower you to live your healthiest and happiest life.
