"Cheesy" Stuffed Sweet Potato

These hearty stuffed sweet potatoes are bound to become a new family favorite!
Baked to perfection and stuffed with nutrient-rich ingredients, these sweet potato delights are then topped with my addicting Vegan "Cheese" Sauce. There are two options for these, one that keeps them plant-based and the other that uses bacon. The rich and velvety "cheese" omits popular dairy substitutes like nutritional yeast, cashews and eggs, making it elimination-diet friendly. Compliant with the Autoimmune Protocol (AIP), Paleo, Whole30, Plant-Based, gluten-free and dairy-free diets.

Sweet potatoes are starchy, root vegetables. Since they're a part of a different family than regular potatoes (nightshades), sweet potatoes are compliant with the AIP diet. They're rich in fiber and antioxidants, both believed to protect against chronic disease and to promote overall gut health.

Broccoli is considered a superfood due to its low-calorie count and impressive amount of vitamins, minerals, fiber and antioxidants. It's believed to help reduce inflammation, lower stress and prevent cellular damage in your eyes.

Purple cabbage is nutrient-dense and also rich in antioxidants. It is thought to promote stronger bones, heart health and protect against cancer.

  • Coconut milk

  • Apple cider vinegar

  • Ground ginger

  • Ground turmeric

 Tips & Tricks

  • The thickness of the sauce is up to you. If you prefer it on the thicker side, cook on the stove for a longer period of time. 

  • Place the bacon slices on a wire rack for perfect crispiness.

  • When shopping for bacon, make sure to read the label! In order to stay compliant with the AIP, Paleo and Whole30 diets you will need to purchase bacon that is sugar-free, nitrate-free, and also free of additives.

  • Save leftover bacon grease, if any, by transferring to a jar with a tight lid and freezing for later use.
