This mouth-watering pudding alternative will fool you into thinking it's the real deal! AIP, Paleo, and Plant-Based with a Vegan option. Using avocados as the base and carob powder as the chocolate alternative, it's a guilt-free dessert that is guaranteed to be a party favorite! Always a hit in my house, this avocado pudding is kind to the gut and tastes absolutely divine. Easy, quick, and healthy, done in under 10 minutes. Ingredients also include honey and lemon. Reverse autoimmune disease.

Avocados are a special fruit because they're a superfood loaded with healthy fats. Studies have shown that their high-fat content helps you to absorb more nutrients from other plants. They are also rich in potassium (even more so than bananas!), reducing your risk for high blood pressure, heart attacks, and kidney failure. 

Carob powder comes from a flowering fruit tree that grows pea pods. While legumes are not allowed on AIP, carob powder gets a pass because it only uses the pod of the bean. Carob tastes similar to chocolate and works as an awesome alternative. Loaded with fiber, low sugar, and antioxidants, it is said to help with weight loss and decrease stomach issues.

Good quality honey not only tastes delicious, but it is also rich in antioxidants that promote a healthy heart. This gift from the bees can help suppress a cough during the cold and flu season. Honey can also decrease the healing time for burns and wounds!

Tips & Tricks

  • Sub 3 tbsp maple syrup in place of the honey for a vegan option.

  • For the longest storage life, put the pudding into a jar with a tight lid, the avocado pit in the pudding, and lemon slices on top.

  • Keeps for up to three days in the fridge.
